I've found that if I wisk together the dry ingredients before adding all the wet, then carefully folding the wet ingredients into the dry, I have a better result. It's not always easy to convert recipes to wheat / dairy free, but this one really works, they baked up nice and fluffly, will definitely make again. A big hit with me, the kids liked it ok.
